A “Chique” Summer Snack

One of my favorite things about our neighborhood is the food. We have an abundance of local Mexican bakeries, Taqueria’s and tons of Food Carts. You may know this about me already, but I could eat Mexican food, especially guacamole, all day every day, but my latest snack is as “cool as a cucumber”, but not!

It is actually quite hot! A nod to all the fresh fruit and veggie cups sold street side. I drench the cucumber in lemon juice with a sprinkle of cayenne pepper. The combination is refreshing with a touch of heat. Exactly what we need this time of year. Try this “Chique” snack and let me know how you like it.

Today, I used a new variety of cucumbers I found at Trader Joe’s. The mini Persian cucumbers are in season right now and they are delicious. Usually I buy the seedless English cucumbers, so I don’t have to peel them. Cut the veggie to your liking, squeeze a wedge of lemon over them, sprinkle with Cayenne pepper, toss and enjoy. Beware of your heavy hand as Cayenne can be very hot!
