
“Chique” Drink: Watermelon Lime Mint Icy
Wow, how I love summer. For more reasons than one, but definitely for the icy cool drinks! I tore this recipe out of a magazine years ago. Originally, it was a cocktail with Rum, but I made it for the kids so omitted the alcohol. Any recipe with only 4 ingredients is a winner in my book. Watermelon, lime juice, sugar & ice. On a hot summer day, you can’t beat it. I have since misplaced the actual recipe, so in an effort to give my readers something more exacting than what I do “put all ingredients in a blender and drink”, I found this one from Barefoot Contessa that is very similar.
Since, I have a garden full of mint I have modified it slightly, by adding tons of mint, which officially turned it into a Watermelon Mojito “Mocktail”, pure deliciousness. You must try it, so summer “Chique”.
Watermelon Mojito (Barefoot Contessa)
30 large fresh mint leaves, coarsely torn by hand
3 to 4 thick slices fresh watermelon
12 ounces light rum, such as Bacardi
½ cup simple syrup
6 tablespoons freshly squeezed lime juice (3 limes)
Sprigs of mint and spears of watermelon, for serving
Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor fitted with the steel blade and purée. Put the mashed mint into a large pitcher with 2 cups of puréed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.
Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold
For my recipe, I just omitted the Rum and added it all to a blender, ice too! It is easy and still the perfect summer “mocktail”! Enjoy.
