“Chique” Recipe: Mango Salsa

If allowed, I could devour a bowl of guacamole and chips every night, so in an effort to live in moderation we limit it to weekly! We love to cook Mexican style food at home because it is so simple, but with fresh ingredients it is also really healthy. My latest culinary obsession is Mango Salsa.  I tasted it at Whole Foods once and ever since I have been making it myself. Right now it is peak season for the Champagne Mango’s. I love a traditional red mango, but the yellow Ataulfo variety are smaller with a smooth, sweet & velvety texture. So last night, our Mexican feast consisted of rice & beans, guacamole and homemade mango salsa. The best part was that we cut our first few springs of Cilantro from our own miniature vegetable garden! “Chique” healthy &  delicious. Do you have a favorite salsa recipe? Please share…

Mango Salsa Recipe

1 Champagne Mango
8 to 10 Grape Tomatoes
1/4 cup diced Red Onion
2 Cilantro Sprigs
1 Lime
1 Serrano Pepper
Salt & Pepper

Mind you, I don’t really measure my ingredients when I am cooking small amounts, so please take my quantities into consideration! First, peel and dice the mango into bite size chunks. Then quarter the grape tomatoes, dice the red onion and chop the washed cilantro leaves. Add all the ingredients into a bowl and then squeeze the juice of a fresh lime over the mixture. Salt & Pepper to taste. I love it with a little kick, so I added a diced Serrano pepper to our bowl and left it out of the kids portion. Eat & enjoy with my favorite Donkey Chips, authentic, homemade, locally produced tortilla chips!
