“Chique” Recipe: Watermelon Icies

All of us have been anxiously awaiting the first day of summer around here. So, in honor of tomorrow’s summer solstice we made our favorite seasonal drink. I have been making this watermelon mint cocktail for years, but today I changed it up a bit for the kids. When you think of summer isn’t it synonymous with that jumbo juicy red fruit? I think so.

Hydration is key this time of year, so we used coconut water as the base to add electrolytes. Also, I sweetened it with coconut oil instead of simple syrup. High praise from all my customers!

Nothing more thirst quenching than “Chique” pink Watermelon Icies. Happy Friday, friends and cheers to the first day of Summer.

Watermelon Icies

3-4 cups watermelon cubes
8-10 oz of coconut water
1 tablespoon coconut oil
2 limes juiced
1-2 cups of ice

Add all ingredients in a blender and blend on high until frothy. Garnish with a watermelon slice, lime or even add a mint sprig! Yields approx 3 drinks. Cheers!
